Mango Tart

This was supposed to be a Mango Macaroon but sadly my first go at baking macaroons failed. The macaroons were flat and too crispy. The moment I lifted them up from the baking tray, they just snapped and broke into pieces. I will try another time and hopefully I will succeed then. Meanwhile, I had a whole tub of Mango cream filling that was ready for the macaroons. I decided to just buy ready made pastry shells and fill them up with mango cream. It was delicious and I enjoyed it all. So here's a picture of what turned out. I sprinkled dessicated coconut on the top for extra taste!




 

Mini Butter Cupcakes

Annika had a friend over for a play date yesterday. I prepared mini cupcakes for them to snack during tea. These mini cupcakes are very very tiny, measuring a mere 3cm in diameter. I had little colourful patty cups to accommodate their sizes.

Very easy and quick to whip up the batter, and then quickly baking them in my preheated oven at 150 degrees. Within 3 minutes (because they are so mini and tiny) they are done. Anything longer they'll turn dark brown!

Lettuce "Sang Choi Bao" Wrap

Cooked this for dinner tonight. I have to say that Annika enjoyed it so it turned out well. I have used my own version instead of adding roast duck as what the normal restaurateurs do.

I used potatoes in my ingredients because I wanted to add Carbohydrate into this dish. The potatoes would replace rice so this would be pleasantly satiated in its own delicious way.



Ingredients

Minced chicken meat
Carrot (shredded)
Potatoes (cubed)

Garlicky Tofu

This is one yummy dish. So healthy and yet appetising. It's one of the easiest dishes to cook.



All you need is just a block of the silken tofu and a bulb of garlic. Mince the garlic up and stir fry with oil. I used extra virgin olive oil so it smelled really good. Not to mention it was extra healthy.

Peanuts and Ribs Soup

I made this soup for dinner last night. Bought the ribs fresh from the butcher yesterday morning after dropping Annika off at school.



Ingredients

1 kg Ribs
2 large Tomatoes
1 bowl of Peanuts

I had to clean the ribs first. To do that, I had the ribs boiled once. Once strained, the ribs are moved to the slow cooker. Then I add the tomatoes and peanuts in. Next you add water and leave it cooking in there for at least 4 hours. I had mine cooked for 6 hours and it was delicious.

Tomato-braised Pork Ribs

I love tomatoes and so I thought I could use them generously in the sauce to braise the pork ribs.



Ingredients used were as follows:

1 brown onion chopped up
1-2 large tomato chopped up
Extra Virgin Olive oil
Salt
Pepper

First I marinated the pork ribs with olive oil, salt and pepper. Set aside for 20 minutes while I chop up the rest of the ingredients.

Garlic Chicken

Cooked this for dinner 2 nights ago.  Served it with mashed potatoes and salad. Simple yet yummy.



First I marinate three pieces of skinless chicken thigh fillets with minced garlic. Sprinkle with salt and pepper. Add chopped up parsley. Set aside for 30 minutes. Next preheat oven to 135 degrees Celsius. Cover the casserole dish with foil and bake chicken for 20 minutes.



After 20 minutes of baking, remove foil and continue to cook chicken for another 10 minutes. By this time, the kitchen smells...

CNY Salmon "Yee Sang" Salad

A delightful salad which is popular during the Chinese New Year celebrations. It comprises shredded ingredients such as fruits and vegetables, and topped with raw salmon and its special sweet plum sauce, which makes it a healthy yet tasty starter when tossed and mixed. Grilled Chilli-stuffed Fish

Cooked this on Saturday. Grilled half dozen of Mackerels with chilli-stuffing.  It wasn't very spicy but enough to suppress the "fishy" smell. Grilling this was way easier and cleaner than deep frying. Needless to say, I saved myself heaps of cleaning time from splattered oil. It was also a convenient way to clean the casserole dishes after the grill as I had earlier laid them with foil.

The recipe for the chilli paste is simple. I have it listed as well if you need to look it up.

Home-made Asparagus Soup

Annika loves my asparagus soup even though she doesn't eat asparagus. That's one way to make her eat her vegies. Anyway, I cooked this combo meal for dinner tonight. It's asparagus soup with a whopper burger meal.





Ingredients for Asparagus Soup for 3 persons:
1 bunch asparagus (cut into shorter pieces)
2-3 cloves of garlic (minced)
3 cups of Chicken Stock (1 cup for each serving)
